I didn’t plan to cook Ukwa today, but the weather had other plans π
The rain started falling, and suddenly, all I could think of was a hot, soft bowl of breadfruit since they always say weather for two,Pregnancy for 1π
There’s something about Ukwa and rainy days. If you’ve ever tasted it with just enough palm oil and a sprinkle of crayfish, you already understand the feeling.π
As the rain kept pouring, I remembered how my mum used to make it. No rush, no stress. Just slow cooking and gist in the kitchen while the aroma filled the house.
So I went out, found a clean portion for ₦ 5,000, came back home and said — “Today, I’ll do it like mama did it.” If you are always running around from kitchen,this is a sign to stop oππ
Finally I made my sweet delicious Ukwa and I’m happy because this cold weather is something else
If you’ve been craving comfort food lately, this might just be your sign to make a pot.
Here’s how I made mine:
π² UKWA (Breadfruit) Recipe – Classic Igbo Style
π Ingredients:
- 4 cups of shelled Ukwa (breadfruit)
- 1/2 teaspoon potash (akanwu) — optional
- Palm oil (to taste)
- Salt (to taste)
- 1–2 seasoning cubes
- Ground crayfish (optional)
- Scent leaf (optional for garnish)
- Water (enough to cook it soft)
π§π½π³ Instructions:
- Rinse the Ukwa and place it in a pot.
- Add potash (just a pinch helps it cook faster).
- Pour enough water and boil till very soft. This may take 40–60 minutes.
- Once soft, add salt, seasoning cubes, and crayfish,then smoke fish if any (optional)
- Drizzle in some palm oil and stir. Let it simmer for 5 more minutes.
- Garnish with scent leaf if you like, and serve hot!
