Garnished Indomie with Fried Plantain Recipe



Ingredients:


  • 2 packs of Indomie noodles (any flavor you love)
  • 2 fresh eggs
  • 1 small red onion (sliced)
  • 1 scotch bonnet (ata rodo) or pepper to taste
  • 1 seasoning cube (optional if not using the full Indomie spice)
  • 1 handful of shredded cabbage or green vegetables (ugwu, spinach, or lettuce)
  • 1 sausage or hotdog (optional, sliced)
  • 1/2 cup of diced fried plantain (ripe and golden brown)
  • Vegetable oil
  • A pinch of salt





Instructions:


  1. Prep Your Plantains First:
    Peel, dice, and fry your plantains until golden brown. Set aside on a paper towel.
  2. Make the Egg Sauce:
    Heat 2 tablespoons of oil in a pan. Add sliced onions and pepper. Let it fry for a minute, then pour in your beaten eggs. Scramble gently and cook till fluffy. Remove and set aside.
  3. Boil the Noodles:
    In a pot, add a little water (just enough to soften the noodles, not soak). Add Indomie, spices, and seasoning. Let it cook halfway (still firm).
  4. Add Garnish:
    Toss in your vegetables, sausage, and the already scrambled eggs. Stir gently and turn off the heat — you don’t want soggy noodles.
  5. Serve With Fried Plantains:
    Dish into a bowl, top with your golden plantains, and maybe even drizzle a little pepper sauce if you’re bold.
